Dear Diary -
Today was a duel recipe day. I got the first recipe on Pinterest. They call them "Chicken Pillows."

My changes to this recipe was:
1. I skipped the Saltine Crackers and used panko bread crumbs because that is what I had at home.
2. I did not make the "gravy" so I didn't use the cream of chicken soup & canned milk. If you do decide to do the canned milk, you want to buy evaporated milk.

Pretty easy recipe to follow and make ... Only thing husband said would be better was some buffalo or BBQ sauce.

My second recipe was Super Rich Cheddar Scalloped Potatoes from www.food.com. Reason is because I wanted to play with my Pampered Chef Simple Slicer - so awesome and less dishes than my food processor! Gotta love that!!

Dear Diary
In my email last week I got a recipe for Angel Food Cake Cupcakes from Cooking Classy - I love me some cupcakes and angel food cake is a better yummy for someone who has issues with sugar resistance. That being said you should only eat ONE a day iced with some sugar free cool whip and strawberries!!!

I didn't change anything in the recipe I used a caramel flavoring ... wow!! I do not need to have the husband to say "do it again."

Ok if you don't have them ... GET THE BATTER BOWLS!!! They are fantastic! I also am going to let the secret out of the bag for uniform cupcakes and cookies is the Stainless Steel Scoops ... used them for years and I think they make baking so easy!!!
The MOST important thing when baking is making sure whatever you are baking is cooled on a cooling rack. It cools whatever you've baked cool evenly and makes it easier to release from the pan without cracking or breaking.

Dear Diary
Today I started a blog to help out with a couple of my goals:
1. I love Food ... but have been faced recently with insulin resistance. So I need to change what and how I eat.
2. I just had my kitchen remodeled and totally love spending time in my kitchen.
3. I started selling The Pampered Chef in April 2013. I have loads of products to try and play with and learn to use.
4. I have hundreds of recipes I have been collecting over the years from blogs and pinterest that I really need to try.
So here is my first Recipe from www.skinnytaste.com: Chicken & Broccoli Noodle Casserole (http://www.skinnytaste.com/2012/02/chicken-and-broccoli-noodle-casserole.html)
My changes to the recipe was the shallot because husband will not eat them. I also only used 2 garlic cloves because I am not a fan of strong garlic. I also used Dreamfields Elbows because it is 65% Lower Glycemic Index with a score of 13 (Regular pasta has a Glycemic Index of 38). More importantly it tastes delicious!!

As for my Pampered Chef products I used. Let's get this straight - I haven't met a Pampered Chef product I didn't love ... That being said with this recipe I love the no stick 8" sauté pan and the 3 1/2]' Paring knife.
